First, crack 5 eggs into a bowl and add a pinch of salt. Gently whisk the eggs with a spatula or chopsticks until the yolks and whites are smoothly combined, avoiding creating too much foam. Whisking too vigorously can cause the rolled omelet to break apart, so be careful.

Prepare the chicken breast and carrot for the fried rice. Dice the chicken breast into bite-sized pieces (about 1cm) and finely mince the carrot. Minced carrot blends better into the fried rice and improves the texture.
