Main Ingredients- 1 bowl of cooked rice
- 1/2 medium zucchini
- 1/2 medium onion
- 1/4 large green onion (scallion)
Cooking Instructions
Step 1
First, thoroughly wash the zucchini and onion, then thinly slice them into strips. Finely chop the green onion. (Tip: Removing the seeds from the zucchini before slicing can make for a neater stir-fry!)
Step 2
Heat a pan over medium heat and add the cooking oil. Add the chopped green onion and minced garlic, and stir-fry until fragrant. Be careful not to burn the garlic; gently sautéing it is key.
Step 3
Add the sliced onion and zucchini to the pan with the aromatic garlic and green onion oil. Increase the heat to medium and stir-fry for 2-3 minutes until the vegetables soften and become translucent.
Step 4
Now, add the soy sauce (1 Tbsp) and oyster sauce (1 Tbsp) for that umami flavor, and stir-fry for another 1-2 minutes until well combined with the vegetables. Drizzle in the sesame oil (1 Tbsp) at this stage to add a nutty aroma.
Step 5
Finally, add a pinch of black pepper (2-3 shakes) and mix everything together briefly for a delicious zucchini stir-fry. (Tip: If cooking for a child, you can omit the pepper or use a very small amount.)
