It’s incredibly easy to make, and when you have no appetite, a spoonful mixed with rice is the ultimate rice thief! Let me introduce you to this irresistible sundubu jang that will have you finishing a bowl of rice in no time.

  • 1 pack Sundubu (soft tofu)
  • 1/2 Onion
  • 1/2 Scallion
  • 2 Korean Green Chili Peppers (Cheongyang)
  • 1 Red Chili Pepper

Seasoning Ingredients

  • 50ml Soy Sauce (Jin Ganjang)
  • 50ml Water
  • 2 Tbsp Plum Extract (Maesil Extract)
  • 1 Tbsp Sugar
  • 1 Tbsp Sesame Oil
  • 1 Tbsp Toasted Sesame Seeds

Cooking Instructions

Step 1

First, prepare the vegetables for your sundubu jang. Peel and finely mince the onion. Chop both the white and green parts of the scallion finely. Deseed the Cheongyang and red chili peppers, then mince them finely to add a spicy kick and vibrant color to your sundubu jang. The finer you mince the vegetables, the better they will meld into the sauce, resulting in a more delicious dish.

Now, let’s prepare the star ingredient: the sundubu. Carefully cut the sundubu pack in half and place it into a container. Then, using a knife, gently cut the sundubu into bite-sized pieces, about 1 to 1.5 cm in size. Try not to cut them too small, as they might break apart too easily. Aim for pieces that are easy to scoop with a spoon.

The key to a delicious sundubu jang lies in its seasoning sauce. In a bowl, combine 50ml of soy sauce, 50ml of water, 2 tablespoons of plum extract for a touch of sweetness, 1 tablespoon of sugar for mild sweetness, 1 tablespoon of sesame oil for its rich aroma, and 1 tablespoon of toasted sesame seeds for added flavor. Stir everything together with a spoon or a whisk until well combined to create a flavorful seasoning sauce.

All the preparations are complete! Evenly distribute the minced onion, scallions, Cheongyang peppers, and red chili peppers over the prepared sundubu. Pour the delicious seasoning sauce you just made over the top, ensuring it covers everything. While you can enjoy this sundubu jang immediately, it’s highly recommended to refrigerate it for at least 6 hours, or preferably longer. This allows the flavors to meld together beautifully, creating a much deeper and richer taste. It’s perfect for mixing with rice – a truly magical dish that will reignite your appetite!
