Welcome! Today we’re making Gamja Chae Bokkeum, a beloved and classic Korean side dish that everyone enjoys. It’s simple yet incredibly delicious.

First, wash the potatoes and carrot thoroughly and get them ready. Peel the potatoes and trim any blemishes off the carrot.

Julienne both the potatoes and carrot into thin, long strips. Aim for about 3mm thickness – too thick and they’ll take a long time to cook, too thin and they might break. Uniform slicing is key! Finely chop the scallions.

Heat a lightly oiled pan over medium heat. Add the julienned potatoes and begin to stir-fry. Once the potatoes start to look translucent, add the carrots and continue to stir-fry together. Cook for about 3-5 minutes until the potatoes are tender but still have a slight bite. Season with salt. Be careful not to use high heat, as this can cause them to burn.

Once the potatoes and carrots are cooked to your liking, add the chopped scallions and stir-fry for just a bit longer. Don’t overcook the scallions; stir for about a minute until they are slightly wilted, to keep them fresh.

Just before turning off the heat, sprinkle in 1 tablespoon of toasted sesame seeds. The nutty aroma of the sesame seeds will greatly enhance the overall flavor of the dish.
