Crispy and Flavorful Stir-Fried Potato Noodles
This stir-fried potato noodle dish, known as Gamja Chae Bokkeum, is an absolute staple for side dishes and something I make often. Today, I’m showing you how to make it without a julienne peeler, simply using a knife to slice the potatoes. Enjoy the delightful texture and savory taste!
Main Ingredients- 3 medium potatoes
- 1/4 carrot
- A small bunch of scallions

Step 1
Welcome! Today we’re making Gamja Chae Bokkeum, a beloved and classic Korean side dish that everyone enjoys. It’s simple yet incredibly delicious.
Step 2
First, wash the potatoes and carrot thoroughly and get them ready. Peel the potatoes and trim any blemishes off the carrot.
Step 3
Julienne both the potatoes and carrot into thin, long strips. Aim for about 3mm thickness – too thick and they’ll take a long time to cook, too thin and they might break. Uniform slicing is key! Finely chop the scallions.
Step 4
Heat a lightly oiled pan over medium heat. Add the julienned potatoes and begin to stir-fry. Once the potatoes start to look translucent, add the carrots and continue to stir-fry together. Cook for about 3-5 minutes until the potatoes are tender but still have a slight bite. Season with salt. Be careful not to use high heat, as this can cause them to burn.
Step 5
Once the potatoes and carrots are cooked to your liking, add the chopped scallions and stir-fry for just a bit longer. Don’t overcook the scallions; stir for about a minute until they are slightly wilted, to keep them fresh.
Step 6
Just before turning off the heat, sprinkle in 1 tablespoon of toasted sesame seeds. The nutty aroma of the sesame seeds will greatly enhance the overall flavor of the dish.
Step 7
Transfer the nicely stir-fried potato noodles to a pretty serving plate. This dish is delicious served warm or at room temperature, making it a perfect make-ahead side dish.
