Cooking Instructions
Step 1
First, prepare 4 fresh eggplants. Wash them thoroughly and cut them into bite-sized pieces (about 1-1.5 cm thick, half-moon or long shapes work well).

Get a deep pan or wok and generously coat it with 6 tablespoons of perilla oil. Heat the pan over medium heat, then add the cut eggplant. Start stir-frying. The eggplant will begin to absorb the oil and soften.

Once the eggplant has softened somewhat and started to wilt, pour 3 tablespoons of soy sauce along the edges of the pan. Allowing the soy sauce to slightly caramelize will add depth of flavor.
