  • 100g Cheese (sliced or shredded)
  • 1 Fresh Egg
  • 3 Medium Shrimp (frozen)
  • 2 Tbsp Tomato Paste
  • 50g Fresh Basil Leaves
  • 1 Whole Dried Red Chili (Peperoncino)
  • 50g Bacon
  • 1 Tbsp Balsamic Glaze

Cooking Instructions

Step 1

In a small pan, gently toast 1 whole dried red chili over medium-low heat to release its aroma. Then, add the thawed frozen shrimp and cook until golden brown and slightly crispy. Set the cooked shrimp aside.

In a separate pan, cook the bacon pieces (cut into bite-sized pieces, about 2-3 cm) over medium heat until golden and crispy. Drain off excess fat. Set the cooked bacon aside.

Prepare one delicious store-bought crêpe. Its thin and tender texture will serve as a wonderful base for our galette.

Place the crêpe in the pan you’ll be using for the galette (a pancake pan or frying pan). Heat the pan over low heat and gently warm the crêpe. Be careful not to overcook it.

Spread 2 tablespoons of tomato paste evenly over the central part of the crêpe using the back of a spoon. Leave about a 1-2 cm border around the edge.

Arrange the cheese (sliced cheese cut into small pieces or shredded cheese) in a circular pattern over the tomato paste, leaving the very center clear for the egg. Don’t make the cheese layer too thick, to ensure the egg cooks properly.

Artfully arrange the crispy bacon pieces and the plump, cooked shrimp over the cheese. Distribute the ingredients evenly for a balanced bite.

The star of the galette! Carefully crack one fresh egg into the center of the crêpe, right on top of the filling. Try not to break the yolk.

Gently fold the edges of the crêpe inwards over the filling, creating a rustic, pocket-like shape. Aim to fold about four sections. Once the shape is secured, cover the pan with a lid and continue to cook over low heat.

Cover and cook on low heat for about 5-7 minutes, or until the egg white is set and the yolk reaches your desired doneness (runny or firm). The cheese should be melted and all the ingredients melded together. Keep an eye on the heat to prevent burning.

Carefully transfer the finished galette to a plate. Garnish with fresh basil leaves and drizzle 1 tablespoon of balsamic glaze in a zigzag pattern for a beautiful presentation. Your elegant brunch galette is ready!
