First, prepare the bacon. Cut it into pieces about the width of your finger or two. Pre-cutting the bacon makes the cooking process much smoother.

Bring a large pot of water to a rolling boil. Once boiling, add 1 teaspoon of salt, then carefully add 1 serving (about 100g) of spaghetti noodles. Cook for about 5 minutes, or slightly less than the package instructions, aiming for an ‘al dente’ texture. This ensures the pasta will finish cooking perfectly in the sauce later.

While the pasta is cooking, heat a separate pan over medium-low heat. Add a little cooking oil and then add the pre-cut bacon. Fry the bacon until it’s golden brown and crispy. It’s important to cook it slowly to render out the fat, which will add great flavor to the sauce.

Once the bacon is nicely browned, use tongs to transfer the cooked spaghetti directly from the boiling water into the pan with the bacon. Add about 2 tablespoons of the pasta cooking water (pasta water) to the pan. This starchy water will help emulsify the sauce, making it smooth and creamy. Now, generously season with black pepper to your liking. The pepper adds a wonderful depth of flavor that complements the creaminess.

Time to add the milk. Pour in just enough milk to lightly coat the bottom of the pan (approximately 100-150ml). Add a little more milk if needed to reach your desired sauce consistency.
