A simple crab stick and egg soup, perfect for a quick and comforting meal.
Main Ingredients- 4 imitation crab sticks (surimi)
- 1 piece dried kelp (dashima), about 5×5 cm
- 3 cups water (approx. 600ml)
Cooking Instructions
Step 1
First, shred the imitation crab sticks into bite-sized pieces in a bowl. Gently separate any clumps for a smoother texture. Have the dried kelp piece ready.
Step 2
In a pot, combine 3 cups of water and the dried kelp. Bring to a boil over medium heat and simmer for 10 minutes. After 10 minutes, remove the kelp to prevent it from releasing a bitter taste. This process extracts a savory and refreshing broth.
Step 3
Once the kelp is removed, add the shredded imitation crab sticks to the clear broth and bring it back to a gentle simmer. Stir in 1 tablespoon of soy sauce for soup (guk-ganjang) to season. This adds a deep flavor. You can add a pinch of black pepper if desired.
Step 4
Crack the 2 eggs into a small bowl and whisk them thoroughly until the yolks and whites are well combined. While the soup is simmering, slowly drizzle the beaten eggs into the pot along the edges. After pouring the eggs, resist the urge to stir immediately. Let them set for a moment, then gently swirl with chopsticks to create delicate ribbons of cooked egg.
