  • 1/2 carrot
  • 1 onion

Seasoning Ingredients

  • 5 Tbsp fish sauce
  • 6 Tbsp red pepper flakes (gochugaru)
  • 1 Tbsp sugar
  • 1 Tbsp plum extract (maesilcheong)
  • 1 Tbsp ginger extract (or minced ginger)
  • 1 Tbsp toasted sesame seeds

Cooking Instructions

Step 1

First, prepare the fresh chives. Remove any yellow leaves or debris. Soak the chives in water mixed with a little vinegar for about 5 minutes, then rinse them under cold running water. This helps to refresh the chives and ensure they are clean. After rinsing, drain them thoroughly in a colander.

Once drained, cut the chives into roughly three equal lengths. Cutting them too short might diminish the crisp texture, so aim for a manageable size.

Peel the carrot and julienne it into thin strips. The vibrant color of the carrot will add visual appeal to your chives kimchi.

Mix everything together well until the seasoning paste is uniform. Taste and adjust the seasoning if needed.
