Unlike the traditional method of boiling and seasoning noodles, this recipe features a quick stir-fry for time-saving. It preserves the bouncy texture of the noodles while being impressively quick to make. While it might be slightly richer, it’s a delicious japchae worth trying at least once! Main Ingredients- Glass Noodles (Dangmyeon): 1 handful
- Chives: 1 handful
- Onion: a little (julienned)
- Fish Cake (Eomuk): 1 sheet (julienned)
- Carrot: a little (julienned)
- Water: 1 cup (for boiling noodles)
Seasoning- Soy Sauce: 5 tsp
- Sugar: 3 tsp
- Sesame Seeds: a little
- Black Pepper: a pinch (to taste)
- Sesame Oil: a little
- Olive Oil: a little (for stir-frying)
- Salt or Monosodium Glutamate (MSG): a little (to adjust seasoning)
- Soy Sauce: 5 tsp
- Sugar: 3 tsp
- Sesame Seeds: a little
- Black Pepper: a pinch (to taste)
- Sesame Oil: a little
- Olive Oil: a little (for stir-frying)
- Salt or Monosodium Glutamate (MSG): a little (to adjust seasoning)
Cooking Instructions
Step 1
First, soak the glass noodles in cold water for at least 30 minutes. This soaking process will make the noodles softer and more delightfully chewy when cooked.
Step 2
Prepare the vegetables and fish cake that will add texture to your japchae. Julienne the onion, carrot, and fish cake. The onion and carrot will provide a tender bite, while the fish cake adds a pleasant chewiness.
Step 3
Wash the chives thoroughly and cut them into bite-sized pieces. Chives can become mushy if overcooked, so it’s best to add them towards the end of the cooking process.
Step 4
Heat a little olive oil in a pan and stir-fry the julienned onion, carrot, and fish cake separately. It’s important to cook each ingredient until just tender while maintaining their individual textures. Sauté the onion until translucent, the carrots until slightly softened, and the fish cake until lightly golden.
Step 5
Bring 1 cup of water to a boil in a pot. Once boiling, add 5 tsp of soy sauce and 3 tsp of sugar to create a seasoned broth. This broth will be the base seasoning for your noodles.
Step 6
Add the soaked glass noodles to the boiling seasoned broth and cook until they are fully tender. Ensure the noodles absorb the seasoning and become soft and bouncy. Stir occasionally to prevent sticking.
Step 7
Once the noodles are cooked, drain the excess water from the pot. Add the stir-fried onion, carrot, fish cake, and the cut chives to the pot with the noodles. Stir-fry everything together gently until well combined.
Step 8
Finally, adjust the seasoning. Add a pinch of salt or MSG to taste, and a dash of black pepper for aroma. Finish with a drizzle of sesame oil and a sprinkle of sesame seeds for a nutty fragrance.
Step 9
Transfer the well-stirred chive japchae to a serving plate, arranging it attractively. It’s best enjoyed immediately while warm. This dish is perfect for the whole family to share and enjoy.
