I made chicken fried rice for the kids who are on vacation. It’s a simple chicken fried rice that can be made easily with frozen teriyaki chicken skewers! The ‘sweet and salty’ teriyaki sauce is perfectly delicious for kids’ palates~

Ingredients

  • 6 frozen teriyaki chicken skewers
  • 100g onion (about 1/4 medium)
  • 40g zucchini (about 1/5 small)
  • 30g carrot (about 1/5 small)
  • 1/2 large green onion
  • 3 eggs

Cooking Instructions

Finely chop the vegetables for the fried rice (onion, zucchini, carrot, green onion) into small pieces. For the green onion, it’s best to slice the white part thinly to bring out its fragrant aroma.

Crack the 3 eggs into a bowl, remove the chalazae (the white stringy bits), and whisk them well until slightly frothy. Unwrap the frozen teriyaki chicken skewers, let them thaw, remove the skewers, and cut them into bite-sized pieces (about 1.5cm).

Heat a large, round-bottomed pan over medium heat. Add a little cooking oil and pour in the whisked eggs to make scrambled eggs. Cook them until they are fluffy but not overly dry, then set aside in a separate bowl. Wipe the pan clean, add a generous amount of cooking oil, and add the sliced green onions. Sauté over low heat to create fragrant green onion oil. It’s important to cook until the sweet and fragrant aroma of the green onions rises.

Once the green onion oil is fragrant, add the chopped vegetables in order of hardness: first, add the carrots and stir-fry for about 1 minute. Then, add the onions and sauté until they become translucent. Finally, add the zucchini and cook just until it wilts slightly. Sprinkle a pinch of pepper at this stage to remove any gamey smell and enhance the flavor.

When the vegetables are partially cooked, add the bite-sized teriyaki chicken pieces to the pan. Stir-fry them evenly with the vegetables, allowing the sweet and savory sauce from the chicken skewers to coat the vegetables. This is key to infusing flavor.

Now, add 3 servings of cooked rice to the pan. Use a spatula to gently break up any clumps of rice and stir-fry everything together. Ensure the fried rice ingredients and the rice are evenly mixed and cooked through.
