Main Ingredients- 150g Chicken Tenderloin (can substitute with chicken breast or thigh)
- 1/2 Onion
- Pinch of Salt
- Pinch of Pepper
- Small amount of Chives (for garnish)
Special Sauce Ingredients- 1 Tbsp Soy Sauce
- 1/2 Tbsp Mirin (Sake)
- 1/2 Tbsp Water
- 1 tsp Sugar
- 2 tsp Oligosaccharide (or corn syrup)
- 1 Tbsp Minced Garlic
- 1 Tbsp Soy Sauce
- 1/2 Tbsp Mirin (Sake)
- 1/2 Tbsp Water
- 1 tsp Sugar
- 2 tsp Oligosaccharide (or corn syrup)
- 1 Tbsp Minced Garlic
Cooking Instructions
Step 1
First, peel the onion and slice it thinly into shreds. Soak the shredded onion in cold water for about 10 minutes to remove its sharpness and enhance its crispiness. Drain well and set aside.
Step 2
Rinse the chicken tenderloins lightly under running water and pat them dry with paper towels. After thawing, season them with a pinch of salt and pepper, tossing to coat evenly. (You can prepare chicken breast or thigh meat the same way.)
Step 3
Let’s make the special sauce, the key to this delicious chicken oyakodon! In a small bowl, combine 1 Tbsp soy sauce, 1/2 Tbsp mirin, 1/2 Tbsp water, 1 tsp sugar, 2 tsp oligosaccharide, and 1 Tbsp minced garlic. Stir well until the sugar is dissolved.
Step 4
Heat a lightly oiled pan over medium heat. Add the seasoned chicken tenderloins. Cut the chicken into bite-sized pieces and cook until golden brown on both sides. Stir frequently to ensure the chicken cooks evenly.
Step 5
When the chicken is almost cooked through, pour the prepared special sauce into the pan. Stir well to coat the chicken evenly with the sauce.
Step 6
Simmer over medium heat until the sauce has thickened slightly and coats the chicken. Turn off the heat once the chicken is well-infused with the delicious sauce and has a glossy appearance. Be careful not to overcook, as the chicken can become dry.
Step 7
Serve the hot rice in a bowl, then generously top it with the glossy, saucy chicken. Arrange the drained, crisp onion shreds around the edges of the rice. Drizzle with mayonnaise to your liking for an extra layer of creaminess. Finally, sprinkle finely chopped chives for color and aroma, and your magnificent chicken oyakodon is complete! Enjoy your meal!
