Simple Chicken Breast Risotto
Easy Risotto Using Rice: A Simple and Delicious Chicken Breast Risotto
I made this delicious risotto easily using regular cooked rice. It’s a simple yet satisfying dish perfect for a quick and flavorful meal.
Ingredients- 1 chicken breast (about 150-200g)
- 1/2 onion, finely chopped
- 1/3 yellow bell pepper, finely chopped
- 1/3 red bell pepper, finely chopped
- A handful of green onions, chopped (for garnish or cooking)
- 2 slices of mozzarella cheese (or 1/2 cup shredded)
- 10 Tbsp tomato sauce (approx. 150ml)
- 2 bowls of cooked rice (approx. 400g)
Seasoning- 1 Tbsp cooking wine (like Mirin or Cheongju) for marinating chicken

Cooking Instructions
Step 1
Begin by preparing all your ingredients. Wash and chop the chicken breast into bite-sized pieces. Finely dice the onion and bell peppers. Chop the green onions.
Step 2
In a bowl, combine the chopped chicken breast with 1 Tbsp of cooking wine (or Mirin), a pinch of salt, and a pinch of black pepper. Gently mix to marinate. This step helps tenderize the chicken and remove any unwanted odors.
Step 3
Finely chop the onion, yellow bell pepper, and red bell pepper. Smaller pieces will blend better into the risotto for a pleasant texture.
Step 4
Heat 1-2 Tbsp of olive oil in a pan over medium heat. Add the marinated chicken breast and stir-fry until it’s cooked through and no longer pink.
Step 5
Once the chicken is cooked, add the chopped onion and bell peppers to the pan. Sauté until the onion becomes translucent, which will bring out the sweetness of the vegetables.
Step 6
Add the 2 bowls of cooked rice to the pan. Use a spatula to break up the rice and stir-fry everything together until well combined with the chicken and vegetables. If using leftover cold rice, it’s best to stir-fry it first to warm it through before adding other ingredients for a creamier texture.
Step 7
Now it’s time to add the sauce. Pour in the 10 Tbsp of tomato sauce and stir well to coat the rice and other ingredients evenly. You can adjust the amount of tomato sauce to your preference.
Step 8
For an extra layer of flavor, add 1 Tbsp of oyster sauce and stir-fry for another minute. The oyster sauce will add a savory depth, making the risotto much richer.
Step 9
Continue to stir-fry for another 1-2 minutes until all the ingredients are nicely blended with the sauce. Finally, add the 2 slices of mozzarella cheese on top. Lower the heat and let the cheese melt completely. (Optional: you can drizzle a little more tomato sauce over the cheese).
Step 10
Your simple chicken breast risotto is ready, with beautifully melted, stretchy mozzarella cheese! Serve hot, garnished with the chopped green onions. This risotto is made with rice, making it incredibly easy, yet it tastes and looks just like a restaurant dish!
