Main Ingredients- 150g Chicken breast
- 50g Carrot
- 50g Onion
- 30g Green onion (scallion)
- 1 bowl Rice (200g)
Cooking Instructions
Step 1
Dice the chicken breast into bite-sized pieces. Similarly, dice the carrot, onion, and green onion. Lightly season the chicken breast with black pepper to remove any gamey odor. In a large bowl, combine the diced chicken breast, vegetables, and 1 tsp of oyster sauce. Mix them gently to marinate. Pre-marinating ensures the flavors are evenly distributed, making the dish more delicious.
Step 2
Heat 2 Tbsp of cooking oil in a frying pan over medium-high heat. Add the prepared chicken breast and vegetables and stir-fry for about 3-4 minutes until the chicken is cooked through and the vegetables are slightly translucent. Keep stirring continuously to prevent burning and ensure even cooking.
Step 3
Once the vegetables and chicken are almost cooked, add 1 bowl of rice (200g) and 1 Tbsp of curry powder. Adding the curry powder first and then stir-frying with the rice helps to coat the ingredients evenly without clumping, enhancing the flavor.
Step 4
Quickly stir-fry for about 2-3 minutes until the rice grains are separated and all ingredients are coated with the fragrant curry. It’s best to mix with chopsticks or a spatula to ensure each grain of rice is well-coated. Transfer to a warm bowl for serving. Enjoy your delicious Chicken Breast Curry Fried Rice! You can also garnish with crumbled seaweed or sesame seeds for extra flavor.
