Ingredients

  • Bread (like sandwich bread or baguette), 150g
  • Onion, 1/2 medium
  • Broccoli, 50g
  • Eggs, 2 large
  • Milk, 1 paper cup (approx. 200ml)
  • Bacon, 3 slices
  • Shredded cheese (mozzarella or pizza cheese), 1/2 paper cup (approx. 50g)
  • Grated Parmesan cheese, 3 tablespoons
  • Wholegrain mustard, 1 tablespoon
  • Salt, to taste
  • Black pepper, to taste
  • Butter, 1/2 tablespoon

First, cut the bread into large, bite-sized pieces. Cutting them too small might cause them to become mushy, so about 2-3 cm cubes are ideal.

In a bowl, whisk together 2 eggs and 1 paper cup (about 200ml) of milk until well combined. Add the cubed bread and gently mix to ensure the bread soaks up the milk and egg mixture. Cover with plastic wrap and refrigerate for at least 2 hours. This step will make the bread moist and help the ingredients meld together beautifully.

Prepare the vegetables and bacon that will add flavor to your brunch. Finely chop the onion and cut the broccoli into bite-sized florets. Slice the bacon into 2-3 cm pieces. It’s best to chop the vegetables a bit coarsely for a pleasant texture; finely chopped vegetables can lose their bite.

To the bread mixture that has been chilling in the refrigerator, add the sautéed vegetables and bacon. Stir in 1 tablespoon of wholegrain mustard for an extra kick and 1/2 paper cup of shredded cheese (mozzarella) for creaminess. Gently combine everything until well mixed. The mustard helps cut through any richness and adds a pleasant tang.
