  • Noodles (Somen or Jungmyeon) for 2 servings
  • Lettuce or similar leafy greens, a handful
  • 1/4 Cucumber

Special Sauce

  • Gochujang (Korean chili paste) 2.5 Tbsp
  • Sugar 1 Tbsp
  • Oligodang (or corn syrup) 1 Tbsp
  • Vinegar 1.5 Tbsp
  • Minced garlic 1 Tbsp
  • Sesame oil 1 Tbsp
  • Store-bought Naengmyeon broth 10 Tbsp (approx. 100ml)

Cooking Instructions

Step 1

First, prepare the fresh vegetables to accompany your Bibim Guksu. Wash lettuce or perilla leaves thoroughly, pat them dry, and then cut them into bite-sized pieces. Thinly julienning the cucumber will make it extra crisp and refreshing. Feel free to use other vegetables you have at home, such as carrots, onions, or radish sprouts.

Now, let’s make the core of this delicious Bibim Guksu: the sauce! In a large bowl, combine 2.5 Tbsp of gochujang, 1 Tbsp of sugar, 1 Tbsp of oligodang, 1.5 Tbsp of vinegar, 1 Tbsp of minced garlic, and 1 Tbsp of sesame oil. Mix them well. Finally, add the secret ingredient – 10 Tbsp of store-bought naengmyeon broth – and stir until you achieve a smooth and glossy sauce. (All measurements are based on a standard tablespoon, and the quantities are for 2 servings of noodles.)

Cook the noodles in boiling water according to the package instructions. Once cooked, quickly rinse the noodles under cold water to remove excess starch and drain them thoroughly. (TIP: To make the noodles chewier, use plenty of water when boiling and add a little cold water a couple of times as it comes to a boil.) Place the prepared vegetables and the sauce over the noodles. Mix everything together well until the noodles and sauce are evenly combined. Enjoy your delicious Bibim Guksu!
