Main Ingredients
  • 1 bunch Green Onions (chopped)
  • 50g Ham or Bacon (sliced 0.5mm thick)
  • 30g Mushrooms (sliced)
  • 1/5 Carrot (julienned)
  • 2 Eggs (beaten)
  • 3 cups Water (approx. 500-600ml, using a paper cup)
  • 30ml Cornstarch Slurry (1 Tbsp cornstarch + 2 Tbsp water, mixed)

Cooking Instructions

Step 1

Begin by heating 2 tablespoons of oil in a frying pan over medium-low heat. Add the chopped green onions and sauté until fragrant, creating a delicious green onion oil. Be careful not to burn them.

Step 2

Once the green onions are aromatic, add the sliced ham (or bacon) and cook until lightly browned and slightly crispy. The rendered fat from the ham will add extra flavor.

Step 3

When the ham is partially cooked, toss in any leftover vegetables you have! I’m adding thinly julienned carrots and sliced mushrooms. Stir-fry all the vegetables until they are slightly tender.

Step 4

Once the ingredients are sautéed, pour in 3 cups of water (approximately 500-600ml using a standard paper cup). You can adjust the amount of water based on your preference for broth consistency.

Step 5

Bring the water to a boil. Then, gradually whisk in the cornstarch slurry (1 tablespoon of cornstarch mixed with 2 tablespoons of water), stirring continuously to prevent lumps. The broth will start to thicken.

Step 6

Now it’s time to season the soup. Add 1 tablespoon of soy sauce and 1 teaspoon of salt for basic seasoning. For an extra depth of flavor, add 1 tablespoon of oyster sauce and let it simmer. Adjust the saltiness to your taste.

Step 7

When all ingredients are cooked and the soup is simmering, reduce the heat to very low or turn it off momentarily. Gently drizzle the beaten eggs into the soup in a circular motion. Avoid stirring vigorously; letting the eggs cook undisturbed will create beautiful ribbons.

Step 8

Once the egg is set and beautifully floated, turn off the heat. Allow the residual heat to cook the eggs through. This results in a wonderfully tender and flavorful Baek Jong-won Egg Drop Soup! Serve immediately while hot for the best experience.
