A super simple soup that’s perfect for any meal! When preparing your daily spread, soup is often a concern. While a stew might suffice, sometimes you find yourself without one, only having side dishes, and then the soup becomes the main worry. This recipe features a quick potato soup made with potatoes and onions! I seasoned it with soy sauce for soup and anchovy sauce. These days, you can even buy pre-peeled potatoes, so grab a bag and whip up this super simple soup in no time! ^^
Ingredients- 5 Potatoes
- 1 Onion
- 2 Cheongyang peppers (Korean chili peppers)
- 1 Tbsp minced garlic (from pre-minced)
- 3 Tbsp chopped green onion
- 2 Tbsp soup soy sauce (Guk-ganjang)
- 1 Tbsp anchovy sauce (fish sauce)
- 1 tsp Salt (for seasoning)
- 1 L Natural Seasoning Dried Pollock Broth (or water/vegetable broth)
Cooking Instructions
Step 1
Roughly chop the onion and cut it to match the size of the potatoes. Add the chopped green onions and minced garlic. We’re also adding the Cheongyang peppers for a slightly spicy kick.
Step 2
Cut the potatoes into generous, bite-sized pieces and add them to the pot.
Step 3
Pour in the natural dried pollock broth and bring it to a boil. Once it’s bubbling vigorously, reduce the heat to medium and continue to cook. When it comes to a rolling boil, transfer to medium heat and season with the soup soy sauce and anchovy sauce. The final seasoning adjustment can be done with salt. Of course, you might not need extra salt.

Here’s your refreshing potato soup, featuring the soft texture of potatoes! It’s a delicious soup that’s always satisfying. I personally love potato soup. It’s so clean and the soft texture of the potatoes is wonderful. While I enjoy chewy textures too, this potato texture is also delightful.
