Gomtang, a rich bone broth soup, requires a significant amount of time to simmer. Today, I’m here to share a recipe for beef shank soup, which can be enjoyed more conveniently. It offers a refreshing and deep flavor without the long cooking time.
Main Ingredients- 400g beef shank, trimmed
- 2L water
- 1 Tbsp cooking wine (or sake)
- 1 large green onion (scallion)
- Salt, to taste
- A pinch of black pepper
Cooking Instructions
Step 1
First, prepare the main ingredient for your delicious beef shank soup: the beef shank. Using fresh beef shank is the foundation for a great taste.
Step 2
Cut the prepared beef shank into bite-sized pieces, about 2-3 cm (approximately 1 inch) in size. This makes it easy to eat after cooking. If cut too small, the broth might not develop enough flavor; if too large, it will take longer to cook. Aim for a size that’s convenient for both cooking and eating.
Step 3
Now, get your pot ready for the broth. Pour about 2 liters of fresh water into a pot and bring it to a boil over high heat. Once the water is rapidly boiling, carefully add the cut beef shank pieces. To help tenderize the meat and reduce any gamey odor, add 1 tablespoon of cooking wine (or sake).

Let the beef shank simmer until it’s tender and fully cooked. During the simmering process, some foam or scum may rise to the surface of the broth. Skim this off gently with a spoon or ladle, as it can make the broth cloudy and affect the flavor. Removing it will result in a clearer, cleaner-tasting soup.

Reduce the heat to medium and let it simmer gently for about 50 minutes. During this time, the beef shank will become very tender, and the rich beef essence will infuse into the broth, creating a deep and satisfying flavor. If the liquid reduces too much during cooking, you can add a little hot water to maintain the desired broth level.
