Main Ingredients- 400ml Store-bought beef bone broth (or homemade bone broth)
- Somen noodles (1 serving)
- A portion of aged kimchi (chopped)
Vegetables- 1/4 Zucchini (julienned)
- 1/4 Onion (julienned)
- 1/4 Green onion (chopped)
- 1/4 Zucchini (julienned)
- 1/4 Onion (julienned)
- 1/4 Green onion (chopped)
Cooking Instructions
Step 1
First, prepare the beef bone broth. If using store-bought broth, use it as is. If you have homemade bone broth, measure out approximately 400ml and pour it into a pot, ready to be heated.
Step 2
Thinly julienne the zucchini and onion. Finely chop the green onion to add fragrance. If you have aged kimchi, chop it into bite-sized pieces.
Step 3
Boil the somen noodles in boiling water for about 3-4 minutes until al dente. Once cooked, rinse them under cold water and drain well. (Optional: You can skip rinsing and add them directly to the broth, but rinsing in cold water gives a chewier texture.)
Step 4
Once the prepared beef bone broth comes to a boil, add the julienned zucchini and onion. Cook until the vegetables are tender.
Step 5
Finally, season the broth with soy sauce or salt to your preference, and add a pinch of black pepper for extra flavor. Serve the beef bone broth with the cooked somen noodles, chopped green onion, and kimchi. Enjoy while it’s warm!
