Main Ingredients

  • 1 pack King Oyster Mushrooms (approx. 200g)
  • 1/2 Onion
  • 1/4 Carrot
  • 2 Korean Green Chilies
  • 8 Scallions

Seasonings & Other Ingredients

  • 1 Tbsp Minced Garlic
  • 1 Tbsp Soy Sauce (regular or light)
  • 2 tsp Salt (adjust to taste)
  • 1 Tbsp Sesame Oil
  • Pinch of Black Pepper
  • 1 Tbsp Toasted Sesame Seeds

Cooking Instructions

Step 1

First, let’s prepare the vegetables. Thinly julienne the onion and carrot. Finely chop the Korean green chilies after removing the seeds. Also, finely chop the scallions after washing them thoroughly.

Lightly rinse the king oyster mushrooms under running water and pat them dry. Trim off the tough base of the mushrooms, then tear them into bite-sized pieces with your hands.

Bring a pot of water to a boil with 1 tsp of salt. Add the prepared king oyster mushrooms and blanch them over high heat for about 1 minute. This process makes the mushrooms chewier and removes any impurities.

Immediately remove the blanched mushrooms from the boiling water and rinse them under cold water to cool them down. Gently squeeze out the excess water with your hands. It’s okay if you don’t squeeze them completely dry. You can also drain them in a colander, but I lightly squeezed mine to save time.

Heat 2 Tbsp of cooking oil in a pan over medium-low heat. Add the minced garlic and stir-fry for about 30 seconds, being careful not to burn it, to release its aroma.

Once the garlic is fragrant, add the julienned onion and carrot. Stir-fry over medium-low heat until the vegetables are slightly tender and the onions become translucent.

When the onions turn translucent, add the drained king oyster mushrooms, soy sauce, the remaining 1 tsp of salt, chopped Korean green chilies, and a pinch of black pepper. Stir-fry for another 2-3 minutes until the mushrooms are tender and well-seasoned. (Since they were blanched, they don’t need to be cooked for a long time!)

Once all ingredients are well combined, turn off the heat. Finally, add the chopped scallions, 1 Tbsp of sesame oil, and 1 Tbsp of toasted sesame seeds. Mix everything thoroughly. Your delicious stir-fried king oyster mushrooms are ready! Enjoy with a warm bowl of rice.
