  • 1.5 bowls cooked rice

Spicy Gochujang Sauce

  • 1.5 Tbsp gochujang (Korean chili paste)
  • 0.5 Tbsp gochugaru (Korean chili flakes)
  • 1/3 Tbsp minced garlic
  • 3 Tbsp vinegar
  • 1 Tbsp carbonated water (optional, for a smoother sauce)
  • 1 Tbsp maesil-cheong (plum syrup)
  • 1/2 Tbsp sugar

Cooking Instructions

Step 1

First, we need to remove the excess salt from the salted kelp. Soak about 100g of salted kelp in cold water for 20 minutes. Remember to change the water 2-3 times during this period to ensure the saltiness is adequately reduced.

Once soaked, gently massage the kelp to rinse it, then wash it under running water 2-3 times until clean. You can lightly blanch it in boiling water if you prefer, but I find it perfectly fine to use as is. Cut the kelp into bite-sized pieces suitable for wraps.

Let’s make the delicious spicy gochujang sauce. In a bowl, combine 1.5 Tbsp gochujang, 0.5 Tbsp gochugaru, 1/3 Tbsp minced garlic, 1 Tbsp maesil-cheong, and 1/2 Tbsp sugar. Stir well until the sugar dissolves. Add 1 Tbsp of carbonated water (this makes the sauce extra smooth!) and finally, mix in 3 Tbsp of vinegar. Give it a good stir until everything is well combined. Your flavorful sauce is ready!

Season the warm cooked rice (1.5 bowls) with a drizzle of sesame oil and a sprinkle of sesame seeds. Mix gently with a spatula until well combined and fragrant.

Shape the seasoned rice into bite-sized portions. Creating slightly oval or flattened round shapes will make it easier to assemble the kelp wraps.
