Cooking Instructions
Step 1
First, make a cross-shaped cut with scissors or a knife on the four corners of each bread slice. This will help you shape the bread easily when placing it into the muffin tin.
Step 2
Brush each cup of the muffin tin with 1 tsp of extra virgin olive oil. This prevents the bread from sticking and adds a subtle flavor.
Step 3
Carefully fit the prepared bread slices into the muffin tin, pressing them to conform to the cup shape. While mini bread slices can be used, regular-sized bread slices create a neater, overflow-free muffin. Gently press the bread to line the cup.
Step 4
Now, spread 1 tsp of ready-made tomato pasta sauce evenly on the bottom inside each bread cup. If you are using regular-sized bread slices, you can increase the sauce amount to 1 Tbsp. The tangy and sweet tomato sauce complements the egg wonderfully.
Step 5
Carefully crack one fresh egg into each bread cup, on top of the tomato sauce. Try not to break the yolk for the best presentation.
Step 6
Sprinkle a generous amount of shredded mozzarella cheese over the eggs. You can add sliced olives at this stage, or place them on top after removing from the oven, according to your preference. The melting cheese will add a delicious savory note.
Step 7
Bake in a preheated oven at 200°C (390°F) for about 20 minutes. Oven temperatures can vary, so it’s a good idea to check on the muffins periodically to ensure they are cooked to your liking. Bake until the cheese is golden and the eggs are set.
Step 8
Carefully remove the baked muffins from the oven. They should have a beautiful golden hue and be ready to serve.
Step 9
For the final touch, sprinkle a pinch of grated cheese and dried parsley over the top of each muffin. This adds visual appeal and enhances the aroma.
Step 10
Finally, arrange the prepared olives attractively on top of the muffins. The colorful toppings make them look even more appealing.
Step 11
Slice a muffin in half to reveal the beautiful cross-section: soft egg, tangy tomato sauce, and gooey cheese all nestled within the toasted bread. These simple yet delicious and nutritious snacks are now complete. Enjoy your delightful creation!
