This recipe was born out of a desire to use up leftover zucchini after making soybean paste stew. It’s an easy and delicious stir-fried zucchini dish perfect for a quick meal!
Main Ingredients- 1 zucchini
- 1/2 onion
- 1 king oyster mushroom
Seasoning- 0.5 Tbsp salt
- 1 Tbsp soy sauce for soup
- 0.5 Tbsp minced garlic
- 1 Tbsp sesame oil
- 0.5 Tbsp salt

Cooking Instructions
Step 1
First, wash the zucchini thoroughly and slice it into half-moons or bite-sized pieces. Slice the onion thinly and the king oyster mushroom into thin strips along the grain. Preparing the ingredients in advance will make the cooking process much smoother.
Step 2
Heat a generous amount of cooking oil in a frying pan. Add the minced garlic and 0.5 Tbsp of salt. Stir-fry over high heat until the garlic is fragrant and the salt has dissolved, which is crucial for developing flavor. Be careful not to burn the garlic.
Step 3
Add all the prepared zucchini, onion, and king oyster mushroom to the pan. Stir-fry quickly over high heat until the vegetables start to soften. Once wilted, turn off the heat, then add 1 Tbsp of soy sauce for soup and 1 Tbsp of sesame oil. Gently mix everything together until the seasonings are evenly distributed. Let the stir-fried zucchini cool slightly before serving to fully appreciate the blend of natural vegetable flavors and the seasoning. Enjoy with a bowl of warm rice!
