Main Ingredients- 100g chives (about one handful)
Seasoning- 0.5 Tbsp soy sauce
- 0.5 Tbsp anchovy sauce
- 1 Tbsp vinegar
- 1 Tbsp gochugaru (Korean chili flakes)
- 2 pinches of salt

Cooking Instructions
Step 1
Start by preparing 100g of fresh chives. This is roughly equivalent to one generous handful. Thoroughly wash the chives to remove any dirt or debris. It’s best to wash them gently: fill a large bowl with water, submerge the chives, and swish them around. Avoid scrubbing vigorously, as this can diminish their fresh aroma or create a bitter taste. Instead, let the water and gentle movement do the work of loosening and washing away impurities. Repeat this washing process 2-3 times until they are clean. After washing, gently pat them dry or let them drain briefly. Then, cut the chives into 4 equal lengths.

Now, let’s prepare the flavorful seasoning. In a bowl with the cut chives, add 0.5 Tbsp of soy sauce, 0.5 Tbsp of anchovy sauce, 1 Tbsp of vinegar, and 1 Tbsp of gochugaru (Korean chili flakes). For the salt, add 2 pinches of salt. A ‘pinch’ here refers to the amount of salt you can hold between your thumb and index finger when you gently press them together. It’s a small amount, so be careful not to add too much. (It’s difficult to measure this precisely by weight, so tasting and adjusting is key!)
Step 3
Finally, gently toss the chives with the seasoning until everything is well combined. The key here is to be gentle to avoid bruising the chives. Mix them as if you are coating them evenly with the dressing, rather than aggressively mixing. This ensures the chives retain their crisp texture. And just like that, your delicious and simple buchu muchim is ready! You can enjoy it immediately, or for an even more refreshing taste, chill it in the refrigerator for a short while before serving.
