  • Sesame seeds 1/3 Tbsp
  • Sesame oil 1/3 Tbsp
  • Fish sauce (anchovy or sand lance) 1.5 Tbsp
  • Minced garlic 1/3 Tbsp

I’ve got a bunch of fresh spinach here. It’s a bit pricey these days, isn’t it? It would be nice if prices were a little more reasonable, but fresh vegetables are always a good choice for health!

Trim the root ends of the spinach and remove any yellowed leaves. Bring a pot of water to a boil with a pinch of coarse salt, and blanch the spinach for just 15-30 seconds. Be careful not to overcook it, as it will become mushy.

Immediately after blanching, rinse the spinach quickly under cold running water to cool it down. This step helps maintain the spinach’s crisp texture and vibrant green color.

Gently squeeze out excess water from the spinach and cut it into bite-sized pieces. Place the spinach in a bowl and add all the seasoning ingredients (sesame seeds, sesame oil, fish sauce, minced garlic). Gently toss and mix everything together with your hands until well combined.
