Simple and Delicious Braised Potatoes (Sumi’s Table Style)

Soft potatoes with a savory and sweet glaze that’s perfect with rice! Make these braised potatoes easily, just like in the Sumi’s Table recipe. A dish everyone, young and old, will love.
Main Ingredients- 4 medium potatoes
- 1 Cheongyang chili pepper (or other spicy green chili)
- 1/2 red chili pepper (for color)
Seasoning Ingredients- 2 tsp soy sauce (for braising)
- 2 tsp sugar
- 1 tsp honey
- Sesame seeds, for garnish

Cooking Instructions
Step 1
Wash the potatoes thoroughly and peel them. If they are large, cut them into bite-sized pieces.
Step 2
Lightly coat the bottom of your braising pot with a small amount of olive oil. This helps prevent sticking.
Step 3
Arrange the prepared potatoes neatly in the pot.
Step 4
Add water just enough to partially cover the potatoes. Be careful not to add too much.
Step 5
Bring to a boil over high heat, then add 2 tsp of soy sauce. This will infuse the potatoes with a savory flavor.

Add 2 tsp of sugar to sweeten the dish. You can adjust the sweetness to your preference.

Cover the pot and simmer over medium heat until the potatoes are tender. Stir occasionally to ensure the seasoning is evenly distributed.

While the potatoes are braising, wash the Cheongyang chili and red chili peppers, remove the stems, and thinly slice them diagonally. These add color and a hint of spice.

Once the potatoes are almost cooked, carefully scoop out about half a cup of the braising liquid and set it aside. (This will be used later to adjust the sauce consistency.) Then, increase the heat slightly and let the sauce thicken into a glaze.

Do not discard the reserved braising liquid! It’s a key ingredient for adjusting the sauce later.

Add 1 tsp of honey for a glossy finish and subtle sweetness.

Finally, add the sliced chili peppers and stir gently for a moment. This keeps the peppers slightly crisp and aromatic.

If, at this point, the potatoes are not fully cooked or the sauce has become too thick, add back some of the reserved braising liquid (from step 8) little by little. Continue to cook until the potatoes are tender and the sauce reaches your desired consistency.

Sprinkle with sesame seeds for garnish. (For an extra touch of visual appeal, you can add a pinch of black sesame seeds.) Turn off the heat and enjoy your glossy, delicious braised potatoes!
