Main Ingredients- 1 medium Potato
- A little bit of Green Onion (finely chopped)
Broth- 1 handful Dried Anchovies for broth (gutted)
- 1 piece Dried Kelp (about 10x10cm)
- 800ml Water
Seasoning- 1 Tbsp Fish Sauce or Soy Sauce (for savory depth)
- 1/2 Tbsp Minced Garlic
- A pinch of Black Pepper (to taste)
- 1 handful Dried Anchovies for broth (gutted)
- 1 piece Dried Kelp (about 10x10cm)

Cooking Instructions
Step 1
First, let’s make the delicious broth for our potato soup. In a pot, combine 800ml of water, 1 handful of dried anchovies (with guts removed), and 1 piece of dried kelp. Bring it to a boil over high heat. Once it starts boiling, remove the kelp, and let it simmer for about 5 more minutes to fully extract the anchovy flavor. Then, remove all the anchovies, leaving behind a clear broth.
Step 2
While the broth is simmering, let’s prepare the potatoes. Wash 1 medium-sized potato thoroughly and peel it using a peeler. Then, cut it into bite-sized pieces, about 1.5cm thick. Be careful not to cut them too thin, as they might break apart during cooking.
Step 3
Rinse the cut potatoes lightly under cold water to remove excess starch. This step helps to prevent the broth from becoming cloudy, resulting in a cleaner taste. Gently shake off any excess water.
Step 4
Now, pour the prepared clear broth back into the pot and bring it to a boil. Once the broth is bubbling, add all the prepared potato pieces. Once the potatoes start to cook, reduce the heat to medium and let them simmer gently.

When the potatoes are partially cooked, add 1 tablespoon of fish sauce or soy sauce to season the soup. Using fish sauce will give the broth a deeper and more refreshing flavor. Remember to taste and adjust the seasoning as needed, rather than adding it all at once.

Next, add 1/2 tablespoon of minced garlic and stir it well with the potatoes as it simmers. The garlic will infuse the broth with a subtle, wonderful aroma, enhancing the overall flavor. Continue to cook for about 5-7 minutes, or until the potatoes are tender.
