Main Ingredients

  • 3 rice cooker cups of Tteokguk Tteok (rice cake slices for soup, approx. 450g)
  • 1 Egg
  • 2 stalks Green Onion
  • 1200ml Anchovy and Dried Kelp Broth (6 cups)

Seasonings & Garnish

  • 2 Tbsp Soup Soy Sauce (Gukganjang)
  • 1 Tbsp Sesame Oil
  • A pinch of Ground Black Pepper

Cooking Instructions

Step 1

Soak the Tteokguk Tteok (rice cake slices) in plenty of water for about 30 minutes until softened. This prevents them from sticking together and makes them wonderfully tender. Lightly beat the egg and set aside.

Wash the green onions, pat them dry, and thinly slice them into about 0.5cm pieces.

Combine the sliced green onions with the beaten egg to prepare the garnish.

Pour 1200ml of the anchovy and dried kelp broth into a pot and bring to a boil over high heat. Once the broth is boiling, proceed to the next step.

Drain the soaked Tteokguk Tteok and add them to the boiling broth.

As the rice cakes cook and the soup returns to a boil, add 2 tablespoons of soup soy sauce to season. You can also use fish sauce for an extra layer of umami.

Once the soup boils again, slowly drizzle the beaten egg mixture around the edges of the pot. It’s important not to stir at this stage; let the egg cook gently, forming beautiful strands.

As soon as the egg is cooked and has formed delicate wisps, immediately turn off the heat. Drizzle with 1 tablespoon of sesame oil and a pinch of ground black pepper to finish. This step enhances the soup’s aroma and flavor.
