Ingredients

  • 3 large fresh eggs
  • 120ml water
  • 1/5 block (approx. 60-70g) soft tofu
  • A small amount of enoki mushrooms
  • 1 sheet of perilla leaf (깻잎)
  • A small amount of red bell pepper
  • 1/2 tsp salt
  • 1 tsp mentsuyu (Japanese seasoned soy sauce)

Crack 3 fresh eggs into a bowl. Add 1/2 tsp of salt. Whisk gently until combined, then strain the mixture through a fine-mesh sieve. This step is crucial for achieving an exceptionally smooth and silky texture by removing any chalazae or unincorporated egg white.

To the strained egg mixture, add 1/5 block of soft tofu. Mash the tofu thoroughly with a fork or spoon until it’s smooth and lump-free. Then, pour in 120ml of water and stir until well combined. The tofu adds a wonderfully soft texture and a subtle, nutty flavor to the custard.

Finely chop a small amount of red bell pepper and a small bunch of enoki mushrooms. Thinly slice or finely chop 1 perilla leaf. Add these prepared vegetables to the egg and tofu mixture. Stir in 1 tsp of mentsuyu for a boost of umami flavor. Mix everything together gently until well incorporated. This forms the base for your delicious tofu and egg custard.

Now it’s time to steam the custard. Fill a pot with water and place a steaming rack or trivet inside. Pour the prepared mixture into a heatproof bowl or ramekin. The custard is done when a skewer inserted into the center comes out clean.
