Protein Powerhouse! Easy Silken Tofu and Egg Custard
This is a comforting dish perfect for soothing a hangover or enjoying as a nutritious meal. Made with soft tofu and enoki mushrooms, this tofu and egg custard is incredibly smooth and packed with nutrients. Its delicate texture and savory flavor make it a delight for all ages.
Ingredients- 3 large fresh eggs
- 120ml water
- 1/5 block (approx. 60-70g) soft tofu
- A small amount of enoki mushrooms
- 1 sheet of perilla leaf (깻잎)
- A small amount of red bell pepper
- 1/2 tsp salt
- 1 tsp mentsuyu (Japanese seasoned soy sauce)
Cooking Instructions
Step 1
Crack 3 fresh eggs into a bowl. Add 1/2 tsp of salt. Whisk gently until combined, then strain the mixture through a fine-mesh sieve. This step is crucial for achieving an exceptionally smooth and silky texture by removing any chalazae or unincorporated egg white.
Step 2
To the strained egg mixture, add 1/5 block of soft tofu. Mash the tofu thoroughly with a fork or spoon until it’s smooth and lump-free. Then, pour in 120ml of water and stir until well combined. The tofu adds a wonderfully soft texture and a subtle, nutty flavor to the custard.
Step 3
Finely chop a small amount of red bell pepper and a small bunch of enoki mushrooms. Thinly slice or finely chop 1 perilla leaf. Add these prepared vegetables to the egg and tofu mixture. Stir in 1 tsp of mentsuyu for a boost of umami flavor. Mix everything together gently until well incorporated. This forms the base for your delicious tofu and egg custard.
Step 4
Now it’s time to steam the custard. Fill a pot with water and place a steaming rack or trivet inside. Pour the prepared mixture into a heatproof bowl or ramekin. Cover the bowl with a lid or plastic wrap. Carefully place the bowl onto the steaming rack in the pot. Cover the pot with its lid and steam over medium-low heat for approximately 15 to 20 minutes. The custard is done when a skewer inserted into the center comes out clean.

Tip! Using a steaming rack in the pot prevents the custard from sticking to the bottom and makes cleanup much easier. It also helps prevent the water from boiling over and making a mess while steaming.
