  • 70g mentaiko (spicy cod roe)
  • 1 cup water (approx. 200ml)
  • 2-3 Tbsp chopped scallions or green onions
  • 1/2 Tbsp sesame oil

Wash and finely chop about 2-3 tablespoons of scallions or green onions. The fresh onion flavor will enhance the egg custard.

In a mixing bowl, crack the 3 eggs and add the minced mentaiko. Whisk them together until well combined. Then, pour in 1 cup of water and mix thoroughly. You don’t need to add any extra salt or seasoning, as the mentaiko provides sufficient flavor. Mash the mentaiko gently as you mix to ensure the flavor is evenly distributed throughout the egg mixture.

Choose a microwave-safe dish. Drizzle 1/2 tablespoon of sesame oil into the dish and use a brush or the back of a spoon to coat the bottom and sides evenly.
