Ingredients

  • 1/2 block silken tofu
  • 3 eggs
  • 1 handful of shrimp or shrimp meat (peeled and finely chopped)
  • 1 shiitake mushroom (thinly sliced)
  • A little green onion (chopped)
  • 1 Tbsp Tsuyu (Japanese soup base)
  • Pinch of salt (to taste)
  • Pinch of black pepper (to taste)

First, prepare all the ingredients for your silken tofu steamed egg. Have your silken tofu ready, peel and finely chop the shrimp meat, thinly slice the shiitake mushroom, and chop the green onion.

To make it easier to remove the silken tofu from its packaging and place it in your steaming dish, gently press down on the middle of the tofu block while it’s still in the package.

Hold the tofu package so that the cut opening faces downwards.

Slightly lift the top part of the package, tilt it inwards over your container, and gently shake. The silken tofu should slide out smoothly.

Lay the removed silken tofu flat and cut it into even pieces, about 2cm apart, making sure they fit nicely in your steaming dish. Arrange the cut tofu pieces in the dish.

Crack 3 fresh eggs into a bowl. Whisk them gently with a fork or whisk until the yolks and whites are well combined. Avoid over-whisking to prevent too much foam.
