Salad Ingredients- 1 block (approx. 250g) silken tofu
- 30g red bell pepper
- 30g yellow bell pepper
- 30g cucumber
- 1 Tbsp chopped scallions
- 2 apple mint leaves (optional, for garnish)
Zesty Vinaigrette Dressing- 1/2 tsp salt
- 2 Tbsp vinegar
- 1 Tbsp sugar
- 2 Tbsp lemon juice
- 2 Tbsp olive oil
- 1/2 tsp salt
- 2 Tbsp vinegar
- 1 Tbsp sugar
- 2 Tbsp lemon juice
- 2 Tbsp olive oil
Cooking Instructions
Step 1
First, prepare the vegetables for the salad. Finely dice the red and yellow bell peppers (about 30g each) after removing the seeds. Dice the cucumber (about 30g) similarly. Finely chop the scallions. (Tip: If using apple mint leaves, stack about 2 leaves, roll them tightly, and then slice thinly for an aromatic touch.)

Drain the block of silken tofu (about 250g) by placing it on a sieve for a short while. Be careful not to drain it for too long, as it can become fragile and break easily.

Gently place the drained silken tofu on a cutting board. Using a knife, first cut it vertically into 3 sections, then make crosswise cuts in each section to create bite-sized cubes. Handle with care to maintain its shape.
