Today, I’m sharing a simple and delicious homemade meal that’s perfect for any day: Silken Tofu and Egg Custard. It’s incredibly easy to make using just a microwave, which makes it a favorite for busy days. The combination of incredibly soft silken tofu, plump shrimp, and fluffy steamed egg is truly delightful!

Main Ingredients

  • 1 pack silken tofu (cut into 1cm thick slices)
  • 2 large eggs
  • 6-8 medium cocktail shrimp (thawed in cold water)
  • 1/2 red chili pepper (seeds removed, finely chopped)
  • 1/2 Korean green chili pepper (or regular green chili pepper, seeds removed, finely chopped)
  • 1/2 green onion (white part mainly, finely chopped)
  • 1/4 small onion (finely minced)

Soy Sauce Dressing

  • 1 Tbsp soy sauce
  • 1 Tbsp corn syrup or allulose
  • 1 Tbsp sesame oil
  • 1/2 Tbsp minced garlic
  • 1 Tbsp water
  • A pinch of toasted sesame seeds (for garnish)

Cooking Instructions

Step 1

First, prepare the silken tofu by cutting it into approximately 1cm thick slices. Arrange these slices neatly at the bottom of a microwave-safe bowl. This ensures the tofu remains beautifully shaped after cooking.

Crack the 2 large eggs into a separate bowl. Remove the chalazae (the white stringy bits) and gently whisk the eggs until just combined, avoiding creating too much foam. Pour the whisked eggs evenly over the silken tofu to create the base of your steamed egg custard.

For the shrimp, thaw the frozen cocktail shrimp by soaking them in cold water. Once thawed, peel them and place them on top of the silken tofu and egg mixture. You can also substitute other seafood or vegetables if you prefer.

Cover the bowl with plastic wrap or a microwave-safe lid, and microwave on high for 5 to 6 minutes. Cook until the eggs are set and the shrimp are plump and cooked through. Cooking time may vary slightly depending on your microwave’s wattage.

While the egg custard is cooking, let’s prepare the soy sauce dressing. In a small bowl, combine the finely minced onion, finely chopped green onion, finely chopped red chili pepper (seeds removed), and finely chopped green chili pepper (seeds removed). Add 1 Tbsp soy sauce, 1 Tbsp corn syrup (or allulose), 1 Tbsp sesame oil, 1/2 Tbsp minced garlic, and 1 Tbsp water. Stir everything together until well combined to create a flavorful soy sauce dressing.

Carefully remove the steamed egg custard from the microwave. Drizzle the prepared soy sauce dressing evenly over the top.
