Silken Steamed Egg with Salted Shrimp
A simple and delicious steamed egg dish made with eggs and salted shrimp, perfect as a side dish.
Create incredibly soft and moist steamed eggs using common ingredients like eggs and salted shrimp. This dish is versatile, serving wonderfully as a side for rice or a delightful snack for children. The savory umami from the salted shrimp complements the delicate texture of the eggs, resulting in a truly satisfying flavor.
Main Ingredients- 3 fresh eggs
- 100ml water
- 1 tsp salted shrimp (saeujeot)
- Pinch of salt (to taste)
- 1 Tbsp sesame oil
- A sprinkle of sesame seeds
Cooking Instructions
Step 1
First, crack 3 eggs into a bowl. Whisk them thoroughly, removing any chalazae (the white stringy bits), until smooth. Use a whisk or fork to ensure the eggs are completely blended without any lumps.
Step 2
Once the eggs are well beaten, pour in 100ml of water. The amount of water is crucial for achieving the desired moistness, so measure it accurately.
Step 3
Next, add 1 teaspoon of salted shrimp (saeujeot). Salted shrimp is the secret ingredient that imparts a deep, savory umami flavor to the steamed eggs. For a smoother texture, you can strain out the shrimp solids and use only the brine, or finely mince the shrimp before adding.
Step 4
Add a pinch of salt to adjust the seasoning. Since salted shrimp is already salty, it’s best to adjust the amount of salt according to your preference. It’s better to add a little at a time and taste as you go.
Step 5
Finally, add 1 tablespoon of sesame oil for a rich, nutty aroma and flavor. Sesame oil will elevate the overall taste of the steamed eggs.
Step 6
Now, combine all the prepared ingredients to create the egg mixture. Stir with a spoon or spatula until everything is evenly incorporated. For an even silkier texture, you can strain the mixture through a fine-mesh sieve.
Step 7
Pour the egg mixture into a small pot or oven-safe dish and place it over medium heat. Stir gently with chopsticks, starting from the edges, to prevent sticking to the bottom. As the egg mixture begins to form soft curds, it’s advisable to reduce the heat slightly.
Step 8
When the egg is about 70-80% cooked and has a soft, curdled appearance, reduce the heat to low. Sprinkle a little sesame seeds over the top as a garnish. Both whole or crushed sesame seeds work well.
Step 9
Finally, cover the pot with a lid and let it steam over low heat for about 3 more minutes. This final steaming step allows the eggs to cook through gently and become incredibly tender. Covering helps trap steam for a moist result.
Step 10
Voila! Your silky and savory steamed egg with salted shrimp is ready. Enjoy it immediately while it’s warm for the best flavor. It’s also delicious spooned over a bowl of rice!
