  • Cooking sake (Mirin), 1 Tbsp
  • Black pepper, a pinch

Other Ingredients

  • Sesame seeds, a pinch (for garnish)
  • Vegetable oil, 1 Tbsp

Cooking Instructions

Step 1

First, let’s prepare the vegetables. Thinly slice the cabbage and onion. Wash the mini king oyster mushrooms under running water, pat them dry, and slice them into bite-sized pieces. Rinse the bean sprouts thoroughly and drain them well, setting them aside in a colander.

Step 1

Step 2

Thaw the frozen shrimp by soaking them in cold water or using the microwave until softened. Pat the thawed shrimp dry with paper towels. In a small bowl, combine the shrimp with 1 Tbsp of cooking sake and a pinch of black pepper. Gently toss to coat. This step helps to remove any fishy odor and enhance the shrimp’s flavor.

Step 2

Step 3

Now, let’s make the special sauce that will make this udon irresistible! In a small bowl, combine 1 Tbsp oyster sauce, 1 Tbsp tonkatsu sauce, 1 Tbsp sesame oil, and 1/2 Tbsp minced garlic. Whisk everything together until well combined. Having the sauce ready beforehand makes the stir-frying process much smoother.

Step 3

Step 4

Heat 1 Tbsp of vegetable oil in a wide pan over medium heat. Add the sliced onions and stir-fry for about 1 minute until they become translucent and fragrant.

Step 4

Step 5

Once the onions start to turn translucent, add the mini king oyster mushrooms and cabbage to the pan. Stir-fry them together until the vegetables are slightly wilted. A light sprinkle of salt and pepper at this stage can help bring out the natural sweetness of the vegetables.

Step 5

Step 6

Now, add the marinated shrimp to the pan. Stir-fry for about 1-2 minutes, or until the shrimp turn pink and are fully cooked. Be careful not to overcook them, as they can become tough.

Step 6

Step 7

With all the vegetables and shrimp nicely stir-fried, it’s time to add the udon noodles and the prepared special sauce. Toss everything together thoroughly, ensuring the noodles are evenly coated with the sauce and mixed well with the vegetables and shrimp.

Step 7

Step 8

Finally, add the rinsed bean sprouts to the pan. It’s important to add them at the very end, as they cook very quickly and you want to preserve their crisp texture.

Step 8

Step 9

Stir-fry for just another moment until the bean sprouts are slightly wilted but still retain their crunch. Turn off the heat immediately to maintain their freshness. Sprinkle with sesame seeds for garnish, and your delicious Shrimp Stir-Fried Udon is ready to be enjoyed!
