Main Ingredients

  • 1/8 carrot, thinly julienned
  • 1/6 onion, thinly sliced
  • 1 shiitake mushroom, stem removed and thinly sliced
  • 1 package (200-250g) refrigerated udon noodles
  • 6 large shrimp (peeled and deveined, rinsed lightly)
  • 30g bonito flakes (katsuobushi)
  • 1 Tbsp minced garlic (or 1 clove, minced)
  • 15g bean sprouts (rinsed lightly)

Special Stir-Fry Sauce

  • 2 Tbsp soy sauce
  • 1 Tbsp granulated sugar
  • 1 Tbsp oyster sauce
  • 1 Tbsp mirin (sweet rice wine)
  • Pinch of black pepper

Cooking Instructions

Step 1

Let’s start by blanching the bean sprouts. Bring a pot of water to a boil with a tiny pinch of salt. Add the bean sprouts and blanch for about 30 seconds to 1 minute. Be careful not to overcook them, as they can become mushy. Rinse them under cold water immediately to maintain their crispness and set aside.

Step 2

Now, let’s prepare the vegetables and shrimp. Finely julienne the carrot and thinly slice the onion. Remove the tough stem from the shiitake mushroom and slice it thinly. Mince the garlic. Lightly rinse the shrimp under running water and pat them dry.

Step 3

Reuse the water you used to blanch the bean sprouts (or bring fresh water to a boil). Add the refrigerated udon noodles and cook according to the package instructions, usually about 1-2 minutes. Drain the udon noodles in a colander.

Step 4

Heat 1-2 tablespoons of cooking oil in a large skillet or wok over medium-low heat. Add the minced garlic and sauté until fragrant, about 30 seconds. Add the sliced onion and stir-fry until it becomes translucent. Next, add the julienned carrots, shrimp, and sliced shiitake mushrooms. Stir-fry everything together until the shrimp turn pink. Pour in the prepared stir-fry sauce (soy sauce, sugar, oyster sauce, mirin, and black pepper). Mix well to coat the ingredients. Finally, add the drained udon noodles and blanched bean sprouts to the skillet. Toss everything together quickly until the noodles are well-coated with the sauce. Just before removing from heat, sprinkle generously with bonito flakes for extra flavor. Enjoy your delicious meal!
