Fried Rice Ingredients
  • 3 bowls of cooked rice (approx. 650g)
  • 1 Tbsp chicken powder
  • 2 Tbsp oyster sauce
  • 2 Tbsp sesame oil
  • 2 Tbsp toasted sesame seeds

For the Shrimp
  • 350g shrimp (peeled and deveined)
  • Pinch of salt
  • A little black pepper

For the Scrambled Eggs
  • 3 eggs
  • Pinch of salt
  • 2 Tbsp cooking oil

For Sautéing Green Onions & Garlic
  • 1/2 stalk green onion
  • 4 Tbsp cooking oil
  • 5 cloves garlic

Cooking Instructions

Step 1

First, prepare your aromatics. Finely chop the green onion and thinly slice the garlic cloves.

Step 2

If using frozen shrimp, briefly rinse them under hot water to thaw, then wash thoroughly and pat dry. You can use any size of shrimp depending on what you have available.

Step 3

Now, let’s make the scrambled eggs! In a bowl, crack the 3 eggs and add a pinch of salt. Whisk them together until well combined.

Step 4

Heat 2 tablespoons of cooking oil in a pan over medium-low heat. Pour in the whisked egg mixture. Gently stir the eggs with chopsticks, cooking them until about 80% done to create soft, fluffy scrambled eggs. Set aside.

Using the same pan (or a clean one), add 4 tablespoons of cooking oil over medium heat. Add the chopped green onions and sliced garlic. Sauté until fragrant, creating a flavorful base.
