Dumplings are an essential part of any festive meal, especially Tteokguk! Today, we’re sharing a special recipe for shrimp dumplings, featuring whole, succulent shrimp for an incredible texture. While it requires a bit of effort, the satisfaction of creating these delicious dumplings from scratch is truly rewarding. These aren’t just for Tteokguk; they’re a delightful treat on their own. Let’s make these comforting, flavorful dumplings together!
Dumpling Filling Ingredients- 10 frozen shrimp (5 whole, 5 finely minced)
- 80g ground meat
- 70g tofu (mashed with the back of a knife)
- 53g zucchini (finely diced)
- 13g white part of green onion (finely chopped)
- 24g soaked glass noodles (soaked in lukewarm water for 20-30 minutes)
Dumpling Wrapper Ingredients- 130g all-purpose flour
- 1/2 tsp salt
- 1 Tbsp cooking oil
- 12 Tbsp water (for dough)
Dumpling Filling Seasoning- 1 Tbsp soy sauce
- 1.5 Tbsp rice wine
- 3 pinches salt
- 6 grinds black pepper (adjust to taste)
- 1/2 Tbsp dried garlic powder
- 130g all-purpose flour
- 1/2 tsp salt
- 1 Tbsp cooking oil
- 12 Tbsp water (for dough)

- 1.5 Tbsp rice wine
- 3 pinches salt
- 6 grinds black pepper (adjust to taste)

Cooking Instructions
Step 1
First, prepare the dumpling filling ingredients. Thaw the frozen shrimp in cold water until pliable. For a delightful texture, use 5 shrimp whole and finely mince the other 5 to incorporate them into the filling. Mash the tofu using the back of a knife to remove excess moisture. Finely chop the zucchini and thinly slice the white part of the green onion. Soak the glass noodles in lukewarm water for about 20-30 minutes until soft, then cut them into manageable pieces.
Step 2
While the glass noodles are soaking, let’s make the dumpling wrappers. In a large bowl, combine 130g of flour and 1/2 tsp of salt. Gradually add 1 Tbsp of cooking oil and 12 Tbsp of water, kneading the mixture until it forms a cohesive dough. Knead until the dough is smooth and elastic. Place the dough in a plastic bag and let it rest at room temperature for about 1 hour. This resting period will make the wrappers more pliable and chewy.
Step 3
Now, let’s mix the dumpling filling. In a large bowl, combine the ground meat, prepared tofu, diced zucchini, chopped green onion, and the soaked glass noodles. Add the seasoning ingredients: 1 Tbsp soy sauce, 1.5 Tbsp rice wine, 3 pinches of salt, and 1/2 Tbsp dried garlic powder. Gently mix everything together with your hands until well combined. Don’t forget to add 6 grinds of black pepper for an extra layer of flavor. Mix just enough to distribute the seasonings evenly.
Step 4
Take the rested dumpling dough and, on a lightly floured surface, roll it out thinly into wrappers. Cut them into desired sizes using a round cutter. Rolling the dough as thinly as possible is key to achieving tender wrappers.
Step 5
It’s time to assemble the dumplings! Place a whole shrimp onto a wrapper. Spoon a generous amount of the prepared filling over the shrimp. Moisten the edges of the wrapper with a little water, then fold it in half and firmly press the edges together to seal. Ensure the shrimp is completely enclosed and the seal is secure to prevent leakage. Shape the dumplings as desired.
Step 6
Arrange the formed dumplings in a steamer basket. Lining the basket with a damp cloth or parchment paper will help prevent the dumplings from sticking. Once the water in the steamer is boiling, place the dumplings inside and steam for about 20 minutes. The dumplings are ready when they become translucent and are cooked through.
