Easy and Delicious Homemade Shrimp Curry Rice Recipe

Main Ingredients- 6 Shrimp (peeled and deveined)
- 1/4 Onion (small)
- 1 handful of Oyster Mushrooms (approx. 50g)
- Shredded Mozzarella Cheese (to taste)
- 1/3 Egg (hard-boiled and prepared)
Curry Sauce Seasoning- 5 Tbsp Curry Powder
- 4 Tbsp Milk
- 1 tsp Honey (or corn syrup)

Cooking Instructions
Step 1
First, prepare the vegetables that will add flavor to your dish. Peel and finely mince the onion. Finely minced onion plays an important role in creating sweetness when sautéed.
Step 2
Remove the tough base from the oyster mushrooms, rinse them lightly under running water, pat dry, and then finely chop them. The mushrooms’ savory flavor will blend wonderfully with the curry.
Step 3
Peel and devein the shrimp, rinse them thoroughly under running water, and pat them dry with paper towels. Then, finely mince the shrimp meat with a knife. If you prefer a more textured bite, you can mince them a bit more coarsely.
Step 4
Heat about 1-2 tablespoons of grapeseed oil in a pan over high heat. Add the minced onion, mushrooms, and shrimp, and stir-fry quickly for 2-3 minutes. Use chopsticks or a spatula to separate the ingredients as they cook so they don’t clump together.
Step 5
Add 5 tablespoons of curry powder to the stir-fried ingredients and cook for another minute to enhance the curry’s aroma. Be careful not to burn the curry powder. Pour in about 1.5 to 2 cups of water (using a paper cup as a measure) and reduce the heat to medium. Simmer for about 5 minutes, stirring occasionally, until the curry sauce thickens.
Step 6
Once the curry sauce has thickened to your liking, add 4 tablespoons of milk for a creamy texture and smooth flavor. Stir well to incorporate the milk, and simmer for another 1-2 minutes to finish the sauce.
Step 7
Serve warm rice in a bowl, and generously top it with shredded mozzarella cheese. The cheese will melt to add even more richness. Gently ladle the finished curry sauce over the cheese.
Step 8
