Main Ingredients

  • 2 cups Anchovy-Kelp Broth (approx. 400ml)
  • 2 medium Potatoes
  • 1/3 Zucchini
  • 1/2 Onion
  • 5 Shrimp (peeled and deveined)
  • 1 cup Clams (purged)
  • 1/2 block Firm Tofu
  • 10cm piece Scallion (Green Onion)

Optional Ingredients (for extra spice)

  • 1 Korean Green Chili Pepper (Cheongyang pepper)
  • 1 Red Chili Pepper
  • 1 handful Chives

Seasoning

  • 3 Tbsp Doenjang (Soybean Paste)
  • 1 Tbsp Gochugaru (Red Chili Flakes)
  • 1 Tbsp Minced Garlic

Cooking Instructions

Step 1

First, prepare the vegetables. Peel the potatoes and zucchini, then slice them into half-moons about 0.5cm thick. Finely dice the onion. Slice the scallions, green chili peppers, and red chili peppers diagonally into thin pieces. Cut the tofu into 2cm cubes.

Pour 2 cups of anchovy-kelp broth into a pot. (It’s convenient to prepare this in advance.)

Add the prepared potatoes to the pot and bring to a boil over medium heat. Let it simmer for about 5 minutes, or until the potatoes start to become translucent and tender.

Once the potatoes are half-cooked and translucent, dissolve 3 tablespoons of doenjang into the broth, preferably through a sieve to avoid lumps. Then, add the sliced zucchini and onion and continue to boil over medium heat.

When the stew comes to a rolling boil, add the prepared shrimp and purged clams. Let it simmer for another 3-4 minutes to allow the flavors of the seafood to meld into the broth. The stew is ready when the shrimp turn red and the clams open.

Finally, stir in 1 tablespoon of minced garlic and 1 tablespoon of gochugaru. Add the cubed tofu, sliced scallions, chili peppers, and chives. Simmer for another moment until everything is heated through. Taste and adjust seasoning with salt if needed. Your delicious Shrimp Doenjang Jjigae is complete!
