  • 1 handful dried, rehydrated seaweed (cut), about 50g
  • 1 bowl shrimp meat, about 150g

Seasoning & Broth

  • 2 Tbsp tuna extract (fish sauce)
  • 1 Tbsp anchovy extract (optional, for extra umami)
  • 2 Tbsp sesame oil
  • 1.8L Anchovy and kelp broth (or rice water)

Cooking Instructions

First, prepare the base broth for your delicious seaweed soup. Boil anchovies and kelp in water to make approximately 1.8L of broth. (For detailed instructions on making anchovy broth, you can refer to recipe @6935857!). Using rice water also yields a pleasant, savory flavor.

Rinse the cut, rehydrated seaweed under running water several times to remove any impurities, then gently squeeze out excess water with your hands. Place the drained seaweed into a pot. Rinse the fresh shrimp meat as well, drain it, and add it to the pot with the seaweed. Please ensure the shrimp are thawed if frozen.

Add the prepared seaweed and shrimp meat to the pot. Pour in 2 tablespoons of sesame oil and 2 tablespoons of tuna extract. Stir-fry over medium-high heat for 1-2 minutes, stirring gently with a spatula to prevent sticking. This step coats the seaweed and shrimp in oil, enhancing their flavors.

Pour the prepared 1.8L of anchovy broth carefully over the stir-fried seaweed and shrimp. This should be enough to generously cover the ingredients.

Now, bring the soup to a boil over high heat. Once boiling, reduce the heat to medium-low and simmer for at least 10 minutes. It’s important to cook it long enough for the seaweed to become tender and for the fresh, savory flavor from the shrimp to fully infuse into the broth.
