  • 3 Tbsp water
  • 1/2 tsp shrimp brine (liquid from pickled shrimp)
  • A little chopped green onion
  • 1 whole shrimp (optional)

First, prepare a ceramic mug or an oven-safe ramekin. Crack one large egg into the mug. Add 3 tablespoons of water and 1/2 teaspoon of shrimp brine. Using chopsticks or a whisk, beat the mixture thoroughly until the egg is completely blended and smooth.

If using a whole shrimp, peel and devein it. Then, cut it into bite-sized pieces. Don’t worry if you don’t have shrimp; the custard will still be delicious!

Add the cut shrimp pieces and a pinch of chopped green onion to the blended egg mixture. Stir gently to combine. This step adds extra flavor and a lovely texture to your steamed egg.

In your rice cooker pot, pour in water for the double boiler. Typically, this is about one cup of water, similar to what you’d use for cooking rice. If you are doubling the recipe (using 2 eggs and double the liquid), it’s best to boil 2 cups of water and pour that into the rice cooker pot to ensure even cooking.

Carefully place the mug with the egg mixture into the water inside the rice cooker. Select the ‘Steam’ or ‘Reheat’ function on your rice cooker and set the timer for 9 minutes.

Once the first 9-minute cycle is complete, open the rice cooker lid to allow the steam to escape for a moment. This helps prevent condensation from dripping onto the custard. Close the lid again and set the ‘Steam’ or ‘Reheat’ function for another 9 minutes.
