Recipe for Shin Dong-yeop’s Braised Tofu from ‘What to Eat Today?’
Introducing Chef Shin Dong-yeop’s special braised tofu recipe, featured on the popular Olive Channel cooking show ‘What to Eat Today?’. This dish is finished with a perfectly cooked egg, and breaking the yolk into the sauce creates a heavenly flavor that makes you finish a bowl of rice in no time! It’s a truly addictive dish.
Main Ingredients- 1/2 block Tofu (approx. 200-250g)
- 1/2 Onion (approx. 40g)
- 1/4 Green Onion (mainly the white part)
- 1 Egg
Sauce Ingredients- 1/2 Tbsp Minced Garlic
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1/2 Tbsp Sugar
- 1+1/2 Tbsp Soy Sauce
- 7 Tbsp Water
- A little Sesame Oil
- A little Black Pepper

Cooking Instructions
Step 1
First, slice the half block of tofu into pieces about 1.5cm to 2cm thick. It’s important to maintain a moderate thickness, as slices that are too thin can easily break apart.
Step 2
Sprinkle a pinch of salt over the sliced tofu to season it, then place it on a colander for about 10 minutes to drain excess water. This step helps prevent the tofu from breaking and makes it firmer, which is ideal for frying.
Step 3
Finely chop or thinly slice the 40g of onion. If cooking for children, chopping it very finely is a good idea.
Step 4
Finely chop the 1/4 green onion, focusing on the white part. The fragrant aroma of the green onion will add depth to the braised dish.
Step 5
In a bowl, combine 1/2 Tbsp minced garlic, 1 Tbsp gochugaru, 1/2 Tbsp sugar, 1+1/2 Tbsp soy sauce, and 7 Tbsp water. Mix well to create the sauce. Finish by adding a little sesame oil and a pinch of black pepper for extra flavor.
Step 6
Heat a frying pan with a generous amount of cooking oil over medium-low heat. Fry the drained tofu pieces on both sides until they are golden brown and firm. A slightly crispy exterior makes it even more delicious.
Step 7
Arrange the fried tofu pieces in layers at the bottom of a pot. Placing the tofu in a single layer without overlapping is key to ensuring the sauce is absorbed evenly.
Step 8
Pour the prepared sauce evenly over the fried tofu. Bring to a simmer over medium-low heat, rather than high heat. During cooking, ladle some of the sauce from the pot over the tofu pieces periodically to help the flavors penetrate. Let it braise for about 10 minutes.
Step 9
Once the sauce has reduced to a nice consistency, crack one egg into a clear space in the pot. Be careful not to break the yolk. Cover the pot and let it cook for about 2-3 minutes until the egg is softly cooked (runny yolk). This completes Shin Dong-yeop’s Braised Tofu! Serve it over hot rice and enjoy the incredible taste as you break the yolk and mix it in.
