Ingredients

  • 300g garlic scapes
  • 5 shiitake mushrooms
  • 2 tsp salt
  • 4 Tbsp oyster sauce
  • 1/2 Tbsp perilla oil (deulgireum)
  • 1 Tbsp toasted sesame seeds
  • 1/3 yellow bell pepper
  • 1/4 carrot
  • 1/3 red bell pepper

Cooking Instructions

First, thoroughly wash the garlic scapes and pat them dry to remove excess water. Then, cut them into bite-sized pieces, about 4cm in length. Cutting them into manageable pieces will make stir-frying easier.

To add vibrant colors and a variety of textures, prepare the other vegetables by julienning them. This includes the yellow and red bell peppers, and the carrot. Also, slice the shiitake mushrooms into thick strips. Feel free to substitute or add other vegetables according to your preference.

Before stir-frying, you can optionally create infused oil by sautéing thinly sliced green onions until fragrant. This adds an extra layer of flavor. If you don’t have green onions, you can skip this step. If you do use green onions for the oil, be aware that they can absorb a lot of seasoning and become salty. It’s a good idea to remove some of the sautéed green onions to add back later, ensuring they don’t overpower the dish.

Begin the stir-frying process. Since garlic scapes take a little time to absorb flavors, add them to the pan first along with 2 teaspoons of salt. Stir-fry them until they start to soften and absorb some of the seasoning.

To ensure the flavors are evenly distributed, add the ingredients in a specific order while stir-frying. The 4 tablespoons of oyster sauce will be added in two parts. After stir-frying the garlic scapes, add 2 tablespoons of oyster sauce. Then, add the julienned vegetables (bell peppers and carrot) and stir-fry. After the vegetables, add another tablespoon of oyster sauce. Finally, add the sliced shiitake mushrooms and drizzle the remaining 1 tablespoon of oyster sauce over them, continuing to stir-fry. Adding ingredients sequentially, starting with those that absorb flavor more slowly, helps to achieve a more balanced taste throughout the dish.

Once all the ingredients are cooked and well combined, taste and adjust the seasoning. The saltiness can vary depending on the moisture content of the vegetables and the amount of oyster sauce used. If it’s not salty enough, add a little more salt, such as seasoned salt, or a touch more oyster sauce. Check the garlic scapes to ensure they are tender yet still have a slight crispness. Once they are cooked to your liking, turn off the heat. Finally, stir in half a tablespoon of perilla oil and one tablespoon of toasted sesame seeds for a nutty aroma and flavor.
