Main Ingredients

  • 1 eggplant
  • 1 package of tofu noodles
  • 5 button mushrooms
  • 1.5 onions
  • 10 small arugula leaves
  • A little parsley
  • 1 head of broccoli
  • 15 cherry tomatoes
  • Chicken breast sausage, to taste
  • 3 packs of mozzarella cheese
  • 2-3 eggs

Seasonings & Others

  • 1 can of tomato sauce
  • Pinch of black pepper
  • 1 Tbsp minced garlic
  • A little rock salt
  • A little olive oil
  • 50-100ml water

Cooking Instructions

Step 1

Thoroughly wash all your vegetables using vinegar and baking soda to remove any pesticides or residues. Let them soak for 5-10 minutes for sanitization, then rinse thoroughly under running water at least 3 times. Pat them dry.

Halve the cherry tomatoes. Finely chop the remaining vegetables (onions, eggplant, broccoli, button mushrooms). Slice the chicken breast sausage into bite-sized pieces.

Heat a pan over medium heat and add olive oil. First, sauté the chicken breast sausage and cherry tomatoes. Then, add the firmer vegetables in order: button mushrooms, onions, eggplant, and broccoli. Stir-fry until the vegetables begin to soften.

Pour in the entire can of tomato sauce (about 500g) and add 50-100ml of water to achieve your desired consistency. Stir well and simmer over medium-low heat until the sauce thickens slightly. Taste and season with rock salt and black pepper as needed.

Now for the star of Shakshuka! Generously sprinkle the 3 packs of mozzarella cheese over the thickened tomato sauce. Carefully crack 2-3 eggs into the sauce, creating little wells for them. Reduce the heat to very low, cover the pan, and let the eggs poach gently until the whites are set and the yolks reach your desired doneness (runny or firm). Low heat is crucial here!

Once the cheese is melted and the eggs are cooked to your liking, artfully garnish with fresh arugula and chopped parsley. Your visually stunning Shakshuka is ready to be enjoyed!
