Eggs in Hell (Shakshuka) – A Heavenly Recipe for Cold Weather
The weather is turning chilly again. Though the dish is named ‘Eggs in Hell,’ when you’re savoring this warm, spicy tomato sauce with a freshly baked baguette on a cold day, your body and soul will feel like they’re in paradise. This comforting dish is perfect for sharing with loved ones and bringing warmth to your home.
Ingredients- 4 Sausages
- 3 strips Bacon
- 1 Onion
- 1/2 Red Bell Pepper
- 4 Eggs
- 1 Tbsp Minced Garlic
- 1 cup Mozzarella Cheese
- 2-1/2 Tbsp Sugar
- Pinch of Salt
- Pinch of Black Pepper
- 1/2 cup Chopped Parsley
- 2 Jalapeños or Korean Green Chilies (adjust to spice preference)
- 2 cups Tomato Sauce (or crushed tomatoes)
- 1/2 cup Water
Cooking Instructions
Step 1
First, prepare your vegetables. Peel the onion and dice it into roughly 2x2cm cubes. Remove the seeds from the red bell pepper and chop it into similar-sized pieces.
Step 2
Finely mince the jalapeños or Korean green chilies for a pleasant heat. Also, finely chop the fresh parsley, which will be used for garnish later.
Step 3
Cut the sausages into substantial, bite-sized pieces (about 1-2 cm thick). Chop the bacon into manageable pieces so it cooks evenly and doesn’t break apart too much.
Step 4
Heat about 1-2 tablespoons of oil in a large, deep skillet over medium heat. Add the diced onion and sauté until it becomes translucent. Then, add the minced garlic and cook for about 1 minute more until fragrant.
Step 5
Add the chopped jalapeños (or green chilies) and red bell pepper to the skillet. Cook, stirring occasionally, until the vegetables soften slightly, about 3-5 minutes. Be mindful of the heat to prevent burning.
Step 6
Now, add the cut sausages and bacon to the skillet. Cook everything together until the sausages are browned and the bacon is cooked through, releasing some of its delicious fat.
Step 7
Pour in the tomato sauce and water, stirring to combine everything. Stir in the sugar to balance the flavors, and season with salt and pepper to your taste. Add about half of the mozzarella cheese and let it simmer until the sauce slightly thickens.
Step 8
While the sauce is simmering, use a spoon to create four small wells in the sauce. Carefully crack an egg into each well, trying not to break the yolks.
Step 9
Once the eggs are in, you can sprinkle the remaining mozzarella cheese over the top if you like. Cover the skillet with a lid and reduce the heat to low. Let it simmer for about 5-8 minutes, or until the egg whites are set and the yolks are cooked to your desired doneness (runny or firm).
Step 10
Finally, sprinkle the fresh chopped parsley over the dish. Turn off the heat and serve immediately. It’s wonderful enjoyed with crusty bread for dipping!
