Main Ingredients- 1 Tbsp minced garlic
- 1 onion, thinly sliced
- Pinch of salt
- 1/2 king oyster mushroom, thinly sliced
- 3 strips bacon, chopped
- 4 small tomatoes (or cherry tomatoes), halved
- 400ml tomato sauce (pasta sauce)
- 200ml water
- 3 eggs
- 1 bowl (approx. 1 cup) shredded cheese (cheddar or mozzarella)
For Serving- 3 pieces of baguette or ciabatta bread
- 2 Tbsp butter
- 3 pieces of baguette or ciabatta bread
- 2 Tbsp butter
Cooking Instructions
Step 1
Heat a generous amount of olive oil in a pan over medium-low heat. Add the sliced onion and minced garlic. Sprinkle with a pinch of salt and sauté until the onions are translucent and lightly golden brown, developing a fragrant aroma.
Step 2
Once the onions are softened, add the sliced king oyster mushroom and chopped bacon to the pan. Cook together until the mushrooms are tender and the bacon is slightly crispy. The rendered fats and aromas will meld beautifully. Finally, add the halved tomatoes and cook for another minute or two. Season with a pinch of salt.
Step 3
Pour in the tomato sauce and water. Stir well to combine everything. Bring the mixture to a simmer over medium heat and let it cook until the sauce thickens slightly, resembling a hearty stew. The liquid should be reduced to about half, creating a rich base.
Step 4
When the sauce has reached a stew-like consistency, use a spoon to gently push the mixture aside, creating three small wells for the eggs. Carefully crack one egg into each well, being careful not to break the yolks.
Step 5
Generously sprinkle shredded cheese over the sauce and around the eggs. Cover the pan with a lid and immediately turn off the heat. If using an induction cooktop, the residual heat will be enough to cook the egg whites. If using a gas stove or other direct heat source, keep the heat on very low to allow the egg whites to set while keeping the yolks runny. This gentle cooking method ensures perfectly cooked eggs with vibrant, runny yolks.
Step 6
While the eggs are cooking, prepare the bread. Slice your baguette or ciabatta into bite-sized pieces. Melt the butter in a separate pan over medium heat. Add the bread slices and toast them, stirring occasionally, until they are golden brown and crispy on all sides.
Step 7
Your delicious Shakshuka is ready to be served! For a final touch of freshness and flavor, sprinkle some chopped fresh parsley or dried basil over the top. Serve immediately with the toasted bread for dipping into the rich sauce and runny yolks. Enjoy!
