Main Ingredients- 50g Flatfish fillet
- 4 Perilla leaves
Seasoning- 1-2 Tbsp Sesame oil (use a large spoon)
- A pinch of salt

Cooking Instructions
Step 1
Prepare the fresh flatfish. (Example: I used a flatfish fillet purchased from Traders to create several dishes for a cooking contest. Using pre-portioned fillets can save cooking time.)

Slice the flatfish fillet into thin, long strips. Cutting the flatfish thinly ensures it absorbs the seasoning well and provides a pleasant texture.
Step 3
Thinly slice the washed perilla leaves into strips, similar in length to the flatfish. The aromatic perilla will enhance the flatfish’s flavor.
Step 4
In a wide bowl, combine the sliced flatfish and perilla leaves. Add a pinch of salt to your preference, then drizzle with 1-2 tablespoons of fragrant sesame oil. Gently toss the ingredients with your hands, being careful not to mash them. The key is to lightly mix them so the savory aroma of sesame oil and the fragrance of perilla leaves meld together.
Step 5
