Main Ingredients- 200g Buckwheat Noodles (for 1 serving)
- 2 sheets Roasted Seaweed (Korean Gim/Nori)
- 1 stalk Scallion
- 4 Tbsp Toasted Sesame Seeds
- 4 Tbsp Perilla Oil (Sesame Oil)
Seasoning Ingredients- 3 Tbsp Soy Sauce
- 1 tsp Sugar
- 1 tsp Vinegar
- 3 Tbsp Vegetable Broth or Kelp Broth
- 3 Tbsp Soy Sauce

Cooking Instructions
Step 1
First, prepare the toppings: the roasted seaweed and toasted sesame seeds. In a blender or food processor, combine the 2 sheets of roasted seaweed (Gim/Nori) and 4 Tbsp of toasted sesame seeds. Blend until both the seaweed and sesame seeds are finely ground. This powder will add a wonderful nutty flavor and aroma to your noodles.
Step 2
Next, prepare the scallions. Wash 1 stalk of scallion thoroughly, pat it dry, and thinly slice it crosswise. If you dislike the pungent taste of scallions, you can omit this step. Feel free to use other vegetables as toppings if desired.

In a small bowl, whisk together the ingredients for the sauce: 3 Tbsp soy sauce, 1 tsp sugar, 1 tsp vinegar, and 3 Tbsp vegetable or kelp broth. Mix until the sugar is dissolved. The broth adds depth of flavor and creates a smoother sauce.
Step 4
Now, it’s time to cook the buckwheat noodles. Bring a pot of water to a rolling boil and add 200g of buckwheat noodles. Cook according to the package instructions, or until the noodles are just tender and have separated. Be careful not to overcook them, as they can become mushy.
Step 5
Once cooked, immediately drain the noodles and rinse them under cold running water to cool them down quickly and firm them up. Gently rub the noodles between your hands while rinsing to remove excess starch. This step is crucial for achieving a chewy texture and preventing the noodles from clumping together.
Step 6
Drain the noodles very well and arrange them attractively in a serving bowl, creating a mound. A well-formed mound makes the dish look more appealing.
Step 7
Finally, assemble your delicious sesame oil buckwheat noodles. Pour 2-3 Tbsp of the prepared sauce over the noodles in the bowl. (Adjust the amount of sauce to your personal taste.) Drizzle 2-3 Tbsp of rich perilla oil over the top. Garnish generously with the ground seaweed and sesame seed mixture from Step 1, and the sliced scallions from Step 2. Before eating, gently toss everything together to coat the noodles evenly with the sauce and oil. Enjoy this delightful dish – it’s perfect for a light and satisfying meal!
